Healthy Crock Pot Chicken


Ingredients:

1 whole organic chicken (4-5 lbs)

1 yellow onion

8 large carrots

8 stalks of celery 

10 small potatoes (red, purple, etc.)

1/2 C dry white wine

1 T rosemary

1 T thyme

2 T garlic

3 T extra virgin olive oil

3 T Tony Chachere’s Creole Spice

Instructions:

Rinse off chicken in sink.  Rub with EVOO, Creole spice, Rosemary, Thyme & Garlic.  Quarter potatoes and shake in a bag with EVOO and Creole spice.  Cut carrots and celery into small pieces.  Put all into crock pot, and put in white wine.  Cook on low for 6-8 hours, (the longer the better.)
