Honey and Lime Glazed Salmon
Ingredients:
Red onion, chopped
2 garlic cloves, chopped
1 tsp crushed red pepper
flakes
1 tsp ground cumin
salt & pepper
juice of 2 limes
3 T honey
1 t chili powder
4 6-oz salmon filets
1 red bell pepper, chopped
1/2 c. chicken stock/broth
15-oz can black beans,
rinsed & drained
3 T fresh cilantro,
chopped
6 c baby spinach
Instructions
Add red onion - Salt & pepper to a medium skillet (use olive oil if you want) over Med heat - cook for 3 minutes
In the meantime, heat some olive oil over med-high heat in another skillet. Combine juice of one lime, honey, chili powder, salt & pepper in shallow dish. Toss salmon filets in mixture to coat & cook in hot skillet until just cooked through, 3-4 minutes on each side.
To the cooked onions, add
bell peppers - cook for 1 minute
Add chicken stock - cook
for 2 minutes
Add black beans - cook
till heated through.
Remove from heat and add
juice of 2nd lime, cilantro, and spinach. Toss to wilt spinach & adjust
seasoning if necessary.
