Vegetarian Fajitas

Ingredients

1 each red, yellow orange bell pepper, sliced

1 package sliced mushrooms

1 head iceberg or romaine lettuce

1 small red onion diced

2 cloves garlic

Salt and pepper to taste

Sauce 

¼ cup almond butter

2 T. olive oil

1-2 t. sriracha sauce (or other hot sauce)

2 t. soy sauce

Instructions

Peel individual leaves from the head of lettuce and set aside. Mix sauce ingredients together and set aside.  Sautee onion for 2 minutes then add everything else but the sauce and cook 5 minutes.  Add the sauce and cook for the last minute.  Add mixture to lettuce leaves, roll up and serve. Add cooked chicken or beef for a non vegetarian option.
