Mexican Soup
Ingredients
1 lb ground beef
1 onion, chopped
4 garlic cloves, minced
1/2 jalapeņo pepper, chopped, without seeds
1 T Coconut Oil
2 cans black beans
2 zucchini, thickly sliced
4 cups chicken or beef broth
2 can diced tomatoes, drained
Chopped cilantro (optional)
Lime juice (optional)
2 T cumin
2 T chili powder
2 t red pepper
Preparation
Saute' onion, garlic and jalapeņo with coconut oil in a large soup pot until soft. Brown ground beef in skillet and season to taste with season salt, chili powder, onion powder, garlic and red pepper (use seasoning additional to what is listed above). Add ground beef and all the remaining ingredients to large pot and bring to a boil. Reduce heat to a simmer and cover and cook for 45 minutes. Add additional spices to your liking. If cooking in a crock pot, cook on low for 6-8 hrs or high for 2 hrs. When cooking in a crock pot, put zucchini in pot for last hour, but not before.
